Walnut Bourbon Snowballs
Every year my grandmother would make these cookies to leave for Santa on Christmas Eve. Of course, there were always lots of extras for us. They are super easy, require no baking, great to make with friends or family “assembly line style” or with younger children. As a bonus, they freeze great for up to a month; although for me, that is very dangerous. I’ve been known to have one or two when the “calling” comes.
Ingredients
1 (11-ounce) box of vanilla wafers processed to a fine crumb
1 2/3 cup toasted walnuts processed to a fine crumb
2 T. cocoa powder
1 ½ cups powdered sugar
½ cup bourbon, dark rum or brandy
1 t. vanilla extract
2 T. light corn syrup
Powdered sugar for coating
Preparation
Mix first four ingredients together well.
Mix corn syrup, vanilla and bourbon together well.
Add to dry
ingredients and stir to combine until a thick dough forms.
Place the additional powdered sugar into a shallow dish.
Wearing disposable gloves, use a scoop and form cookie mixture into
balls, roll in the reserved sugar, placing onto a cookie sheet.
Store in an airtight container for up to a week in the refrigerator and a
month in the freezer.
