Happy Father’s Day!
THE BEAT GOES ON
Don’t forget that Sunday is Father’s Day. The first Father’s Day was celebrated on June 19, 1910, but it wasn’t until 1972 that President Richard Nixon signed it into law. It is always the 3rd Sunday in June. This Sunday is also Summer Solstice, the astronomical start of Summer and the longest day of sunlight of the year. Interestingly, below the equator it is the start of Winter. And Father’s Day marks the anniversary of moving into my beautiful home 30 years ago.
I immediately began working on my gardens, which were very overgrown and not well thought out. I have been so fortunate to have had some incredible insights and help from master gardeners who have planned and designed gorgeous, deer-resistant beds over the years. One of the first things I planted was rhubarb, which was a housewarming gift from a friend. It was from her mom’s garden and along with it came several Peony bushes that have thrived incredibly over the decades.
Rhubarb is not a fruit, but a vegetable. Originally grown in Asia for its medicinal value, it became a culinary entity by British and American cooks in the late 1700s. Mine grows like crazy and whenever I cut some stalks they grow back in no time at all, lasting well into the late summer.
I’m always looking for new and different Rhubarb recipes and be prepared to have a few of my favorites head your way. This recipe is super easy, and the raw rhubarb keeps the cookies super moist.
