Fresh, No Cook, Cranberry Relish

Ingredients

12-ounce package fresh cranberries, washed

1 large orange

¾ cup sugar

½ cup chopped pecans—optional

1 ounce orange liquor—optional

Preparation

Cut orange into eighths, removing pits but keeping the skin

Add ½ of the cranberries, 1/3 cup of sugar and ½ of the orange into a food processor or high-speed blender. Pulse until chunky, empty into a bowl and repeat with the remaining cranberries, orange and another 1/3 cup sugar. Add to above mixture

Taste and add the additional sugar if desired.

Add nuts and liquor if desired.

Refrigerate for at least an hour and up to 5 days. Or, freeze and thaw a day ahead of use.
